This is my main bread recipe, I just love to eat these gui crispy bread with a mildly sweet feeling on the tip of tongue - actually I am eating one nearly every day.
Yes, I also 'sometimes' make myself a bagel sandwhich - they are so tasty it is hard to believe.
While this post is about making bagels, I put the recipe for the bagel sandwhich in the bottom - don't cheat yourself, try the sandwhich.
80g whole wheat flour
220g flour
60g stiff starter
5g salt
2 tbsp black sesame seeds
180g water
15g honey
10g canola oil
Dash of sesame oil
I mixed the dough except the starter and let chill in the fridge overnight. In the morning I let come to room temp and added my starter. I let dough proof until double. Then I divided the dough and shaped into 8 bagels. I let them half proof and boiled with 1tbsp molasses in the water for about 20-30sec per side. I coated the baking sheet with semolina and topped them with chia seeds (i like the crunch). Bake them at 220C for 18 min.
